Kaiman's veal was featured at the James Beard House, June 2012 with Vermont Chef Jason Tostrup of the Inn at Weathersfield. She began selling the veal to supplement the revenue of her dairy farm. She said, "These boys are considered waste on most dairy farms. At my farm, we raise them humanely and sell them as veal to restaurants and individuals. Every bit of the animal is available--from nose to tail. |
