Cavendish Game Birds began in 1988 with the simple goal of providing local kitchens with fresh game birds and quail eggs. Owned by brothers Rick and Bill Thompson, Cavendish Game Birds, located in Springfield, Vermont, is the largest producer of jumbo Coturnix quail in New England.
Fresh game birds were not always available locally, so the Thompson's began raising pheasants in their
backyard to supply the Inn's guests. Three years later, Bill was delivering fresh pheasant and quail to many of Vermont's finest restaurants, and Rick was selling them to his restaurant accounts in Philadelphia and Boston. Raised with small farm pride, these restaurant-quality birds are carefully hand-processed in their Vermont-inspected onsite processing plant.
